If you are looking for really well priced hotel style accommodation, I can recommend The Victoria hotel in Melbourne http://www.victoriahotel.com.au/ - great location and easy to get around - no need for a car at all. There are heaps of restaurants around the hotel too. The hotel helped me with tours but we kept local as kids were a bit younger. In Sydney, Ibis hotels are really good too. I would stay in Darling Harbour or the city because then you are central to everything. Hope that helps!
