Hire a canoe on the coast and go snorkelling ... some great spots over in the East at Padambai.
In Ubud head over to the Sayan valley: despite all the posh hotels there are some trails that drop down to the river where the local kids go swimming after school and where the rafting companies take tourists down.

In Ubud there's plenty of courses that are suitable (some specifically for kids) like cooking, batik, jewelry making, painting, kite making and dancing. There's also activities such as rice field walks, bike riding tours (mostly downhill) and white water rafting.
There's the monkey forest, Ubud market, Bali bird park and temples to visit and in the evening loads of dances and shadow puppet performances to choose from. In Ubud, you will be spoiled for activities.
Visit the Information centre opposite the Ubud market to pick up some brochures and also ask at your hotel or guest house if they can suggest some activities. The Pondok Library (behind the soccer field) offers activities and also has lots of posters and brochures on their notice boards. about 8 years ago
