I would like to go on an escorted tour and get a little more in-depth into the determination - I don't want to sit on a beach nor go shopping in Kuta...just not sure whether it's worth waiting to barter for something while I'm there

I would highly recomend booking at least your accommodation before you get there. As far as tours go, there are a lot of day tours available through various companies, however from my experience it can be difficult finding what you want when you get there. It all depends on your budget, and how flexible you are with what you see.
Also if you are not so keen on the Kuta tourist vibe I can highly recommend staying in Ubud, the temples and monkey sanctuary seem a very long way from the beaches and bargaining of the main tourist hubs. There are some amazing local arts and crafts markets just south of Ubud in Sukawati. about 10 years ago

I agree: book your accommodation in advance, head up to Ubud and make the most of it. See my other answers on Bali for the best place to see the famous Kechak dance. about 10 years ago
