I would recommend paragliding, hiking up to watch the sunrise at Sarankot, and taking a boat or kayak out on Phewa Lake. You can also hike up to the World Peace Pagoda, which has incredible views of the Himalayas. Devi Falls is a popular tourist spot too. I missed out on visiting the Tibetan refugee camp, but hoping to return at some point and will make a visit then.
